Just wondering if you guys have any favorite summer foods, specifically things that refresh and cool you off. And no, beer doesn't count as a food, unfortunately Laughing

I'm partial to lots of watermelon and other fresh fruit. Salads with chicken or better yet, seafood, really hit the spot. I'm about to dig into a nice basic tuna salad, just tuna, diced onion, and mayo. I also love cold shrimp dishes like shrimp cocktail, or ceviche, which is Mexican by way of Spain. It's not cooked by heat; rather, you marinate raw shrimp and crab in lemon juice overnight and the acid of the lemon cooks it quite safely. You get more nutrition from it due to it not being exposed to heat, and it is sooo tasty...

I gotta go eat, and I'm including a serving from the beer group in there Very Happy
