I really enjoy cooking (when I have a proper amount of time to do it right, anyway). Also a big fan of eating Very Happy I cook and eat a lot of different styles; however, being that my wife is from Mexico, I've learned how to make a lot of Mexican dishes the authentic way. I have a few different salsas that I make. One of my favorite breakfasts to cook is a skillet with chorizo (Mexican sausage), scrambled eggs, and diced potatoes. Of course, tacos, beans, and rice are pretty commonly seen in our house too. I also like to cook out on charcoal: brats, chicken, steak... the usual suspects. I also bake when the mood strikes me. Cakes and cookies from scratch, when time permits.

Same here (love to eat and cook...probably too much)
Though for some reason not a big fan of seafood.

Holiday time food is my favorite - no I'm not talking Turkey and Ham and all that - give me Tamales and I will be one happy camper!

My wife makes amazing tamales... where she's from (Veracruz in Southern Mexico) they don't wrap them in corn husks, which is more of a Northern Mexico style; instead they do it like Central Americans do and wrap them in banana leaves. Now that I've tried them that way I really don't like the corn husk ones much. They're a lot moister (is that a word?) and have an almost smoky/roasted flavor, especially the ones from the bottom of the pot, closer to the heat. Puerto Ricans make a dish called pasteles which are basically banana leaf tamales but rather than using the corn masa (the dough stuff inside) they shred green plantains and make masa from that. They usually put ketchup on them which might sound weird but ay caramba, they are good!

Have you ever had Salvadoran food? It's very similar to Veracruzano food, and they have these things called pupusas which are freaking amazing.

I really shouldn't talk food this late at night when I should be going to bed. Now I'm hungry Mad
